Vegetable Fajitas with a Lettuce and Avocado Salad Recipe

Mexican Mushroom Fajita: Sautéed mushrooms, courgettes, red onions, and bell peppers seasoned with fajita spices, wrapped in a tortilla and paired with a fresh salsa of tomato, cucumber, coriander, and chilli. Served alongside a chipotle cream and a crisp lettuce and creamy avocado salad.

Ingredients
  

Veg

  • 1 whole bell pepper (yellow)
  • 1 whole courgette
  • 4 tbsp fajita seasoning
  • 2 cloves garlic
  • 200 grams mushrooms
  • 1 whole red onions

Salsa

  • 0.5 whole cucumber
  • 0.5 whole fresh chilli
  • 0.5 whole red onions
  • 2 grams brown sugar
  • 3 whole tomatoes
  • 10 sprig fresh coriander

Cream

  • 1 tsp chipotle paste
  • 3 tbsp mayonnaise light
  • 100 ml sour cream

Salad

  • 1 whole avocado
  • 60 grams lettuce
  • 0.5 whole lime

Wrap

  • 4 single wraps

Instructions
 

  • peel and finely chop the red onion, peel the cucumber and cut into cubes, wash and finely chop the chilli, wash and chop the tomatoes, wash and finely chop the fresh coriander, mix the salsa ingredients together in a bowl, set a side
  • mix the cream ingredients together in a bowl, set a side
  • wash and slice the mushrooms, peel and crush the garlic using the garlic crusher or chop finely, wash the courgettes chop into chip shapes, wash and slice the peppers into strips, peel and finely slice the onion(s)
  • heat the frying pan with a little oil, add the onions, cook for a minute or two, add the peppers, cook for a minute or two
  • add the courgettes to the frying pan, cook for 2 to 3 minutes, add the mushrooms, cook for 5 minutes, add the garlic and the fajita seasoning to the frying pan, cook for 2 to 3 minutes
  • cut the avocado(s) in half remove the stone and skin, slice lengthways into thin slices, squeeze the lime(s), toss the avocado in the lime juice, shred the lettuce, mix the salad ingredients together in a bowl
  • warm the wraps in the microwave for 30 seconds or cover the wraps in foil and place in the oven for 5 mins till warm
  • add the vegetable mixture to the wrap, add the salsa and the cream to the wrap, roll the wrap, serve with the salad
