Veg Shami Kebab, also known as Subz Shammi Kebab, is a flavorful and protein-rich vegetarian alternative to the traditional meat-based kebab. Made using a blend of chana dal (Bengal gram), assorted vegetables, and aromatic Indian spices, these patties are shaped and shallow-fried to golden perfection.
Soft on the inside and slightly crisp on the outside, these kebabs offer a delicious mix of earthy, spicy, and herby flavors. Often served with mint chutney, pickled onions, or a light yogurt dip, they make for an excellent appetizer, snack, or party starter.

Ingredients
  

For Shami Masala 

  • Bayleaf (तेज पत्ता) – 2 nos
  • Coriander seeds (धनिया बीज) – 2 tbsp
  • Cumin (जीरा) – 2 tsp
  • Caraway (शाही जीरा) – 1 tsp
  • Dry red chillies (सूखी लाल मिर्च) – 5-6 nos
  • Mace (जावित्री) – 2-3 blades
  • Cinnamon ½” long (दालचीनी) – 3-4 nos 
  • Peppercorns (काली मिर्च) – 2 tsp
  • Black cardamom (काली ईलाइची) – 3 nos
  • Cardamom (ईलाइची) – 10-12 nos  

For Shami Mixture

  • Onion, large (प्याज़) – 1 no
  • Potato, medium (आलू) – 2 nos 
  • Ghee (घी) – 2 tbsp
  • Ginger, chopped (अदरक) – 1 tbsp
  • Garlic cloves (लहसुन) – 12 nos
  • Green chillies (हरि मिर्च) – 2 nos
  • Carrot, medium (गाजर) – 2 nos
  • Cauliflower, medium (गोभी) – 1 no 
  • Beans, long (बीन्स) – 20 nos
  • Chana dal (चना दाल) – ½ cup
  • Green Peas (हरे मटर) – 1 cup
  • Salt (नमक) – to taste  
  • Shami Ka Masala (शामी का मसाला) – 2 tbsp
  • Turmeric (हल्दी) – ¾ tsp
  • Kashmiri chilli powder (कश्मीरी चिल्ली पाउडर) – ¾ tbsp
  • Water (पानी) – 1½ cups

While Mixing

  • Coriander, chopped (ताज़ा धनिया)- 3 tbsp 
  • Mint, chopped (पुदीना) – 2 tbsp
  • Green chillies chopped (हरि मिर्च) – 1 no
  • Gram Flour, roasted (भुना बेसन) – 2-3 tbsp

For Stuffing  

  • Hung curd (गाढ़ी दही) – ½ cup
  • Mint, chopped (पुदीना) – 1 tbsp
  • Coriander, chopped (ताज़ा धनिया) – 1 tbsp 
  • Onion chopped (प्याज़) – 2 tbsp
  • Salt (नमक) – to taste
  • Ghee (घी) – for frying

For Garnish

  • Masala Onion rings 
  • Coriander sprigs 
  • Mint chutney 
  • Lemon

Instructions
 

For Shami Ka Garam Masala

  • Let’s make a vegetarian alternative to the iconic Shami Kebab! For Shami Masala, heat a pan and add Peppercorns, Cinnamon, Cardamom, Black cardamom, Javitri, Dry red chillies, Cloves, Shahi Jeera, Cumin, Coriander seeds, and Bayleaf. Roast it for a while till everything turns a little brown. Blend them all to a fine powder and the Shami masala is ready.

For Shami Mixture

  • Roughly cut onions, and potatoes. Now in a hot pressure cooker pot, add ghee, onions, ginger, and garlic, then roast them well. Roughly cut green chillies, carrots, cauliflower, and beans, then add them to the pot. Add soaked chana dal, green peas, salt to taste, shami kebab masala, turmeric, and Kashmiri chilli powder. Mix them well and roast for a while. Now add a dash of water then stir it. Close the lid of the pressure cooker and cook for about 2 whistles.
  • After cooking, pound all the veggies and chana dal using a mathani or masher. Transfer the mashed mixture to a flat bowl and let it cool down. Mix coriander, mint, green chillies, and roasted gram flour well. The mixture is ready.
    Mix hung curd, finely chopped coriander leaves, mint leaves, onion, and salt for the stuffing.
  • Take a small portion of the mixture, then fill it with the stuffing. Make a ball, then flatten it to shape them into patties.
    Heat a tawa, pour some oil, and then place the shami kebabs on it. Cook both sides till it's golden brown.
    Serve it with some chutney and enjoy your 'sham' with tasty Veg 'Shami's Kebab.
