This lemon vinaigrette is among my preferred salad dressings. It pairs perfectly with a straightforward salad or drizzled over crispy Parmesan chicken atop a bed of greens.

Ingredients
  

  • ¼ cup red wine vinegar
  • 2 tablespoons Dijon mustard, or to taste
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ½ cup olive oil
  • 2 tablespoons fresh lemon juice

Instructions
 

  • Whisk red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper together in a small bowl. Slowly stream olive oil into vinegar mixture, whisking continuously, until well combined. Add lemon juice and whisk to combine.
  • Pour vinaigrette into a screw-top jar or bottle, seal. Shake before serving.
