Genasina palya recipe

Genasina palya or sweet potato stir fry is made using sweet potato, onion, green chili, and a flavorful tempering. Ingredients
- 1/4 kg genasu or sweet potato
- 1 big onion
- 1/2 tsp chopped ginger
- 4 – 6 tsp cooking oil
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- A big pinch of turmeric powder
- A big pinch of asafoetida
- 1 – 2 green chilies
- 4-5 curry leaves
- Salt as per your taste
- 1 tbsp finely chopped coriander leaves
Instructions
- Wash the sweet potatoes. Cook them in a pressure cooker by adding required water.
- Once they are cooked, peel and chop them.
- Next take oil in a frying pan and heat it. Add in 1/2 tsp mustard seeds and 1/2 tsp cumin seeds.
- When the mustard seeds splutters and in asafoetida and turmeric powder
- Followed by add in slit green chilies and curry leaves.
- Then add in finely chopped onion and ginger.
- Saute until onions turn translucent under medium flame.
- Next add in cooked and chopped sweet potato. Also sprinkle the salt as per your taste. Give a quick mix.
- Add in coriander leaves and mix well for a minute. Switch off the stove. Serve it as snacks. Or serve it with hot steaming rice or chapathi.
