- 1/4 kg genasu or sweet potato
- 1 big onion
- 1/2 tsp chopped ginger
- 4 - 6 tsp cooking oil
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- A big pinch of turmeric powder
- A big pinch of asafoetida
- 1 - 2 green chilies
- 4-5 curry leaves
- Salt as per your taste
- 1 tbsp finely chopped coriander leaves
Wash the sweet potatoes. Cook them in a pressure cooker by adding required water.
Once they are cooked, peel and chop them.
Next take oil in a frying pan and heat it. Add in 1/2 tsp mustard seeds and 1/2 tsp cumin seeds.
When the mustard seeds splutters and in asafoetida and turmeric powder
Followed by add in slit green chilies and curry leaves.
Then add in finely chopped onion and ginger.
Saute until onions turn translucent under medium flame.
Next add in cooked and chopped sweet potato. Also sprinkle the salt as per your taste. Give a quick mix.
Add in coriander leaves and mix well for a minute. Switch off the stove. Serve it as snacks. Or serve it with hot steaming rice or chapathi.
