Sweet Potato Salad
A delightful departure from the typical potato salad, this dish features sweet potatoes mixed with raisins and walnuts in a lusciously sweet and creamy dressing. It makes for a superb autumn side dish.
Ingredients
- 2 pounds sweet potatoes, peeled and cubed
- 1 cup mayonnaise
- ½ cup packed brown sugar
- 1 cup chopped walnuts
- ½ cup raisins
Instructions
- Place potatoes into a large saucepan and fill with enough water to cover. Bring to a boil, and cook for about 8 minutes, or until tender. Drain, and cool slightly.
- In a large bowl, stir together the mayonnaise and brown sugar. Stir in the sweet potatoes, walnuts and raisins until evenly coated. Chill for at least 1 hour before serving.
