
Strawberry Cheesecake Recipe

Ingredients
For ginger crumble:
- 1/2 tbsp jaggery powder
- 1/4 tsp dry ginger powder
- Pinch of rock salt
For strawberry gel:
- 1/2 cup strawberries, chopped
- 2 tbsp powdered jaggery
- 1/2 tsp cornflour
- 1 tbsp water
For cheesecake:
- 1 cup cashews, soaked
- 3 tbsp powdered jaggery
- 3 tbsp lemon juice
- 1 tbsp strawberry gel
- 2 tbsp water
- 1/2 tsp agar, agar mixed with 1 tbsp of hot water
For garnish (optional)
- Microgreens
- Edible flowers
Instructions
- To prepare the ginger crumble, quickly pulse the almonds in a blender. Blend the remaining ingredients using your hand.
- To prepare the strawberry gel, take a pan, and add strawberries, jaggery, corn flour and water. Cook for a brief minute and keep it aside.
- To prepare the cheesecake, blend all ingredients in a blender. Pour in the mould and chill in the freezer for 5-6 hours. Once frozen, remove from the mould.
- To assemble all components together, sprinkle 3 tsp of ginger crumble on a plate. Place a piece of cheesecake on top of it. Garnish with strawberry gel, micro greens and edible flowers.
