Ingredients
- 1 medium sized cucumber
- 1/2 cup curd
- 1 onion
- 1 – 2 green chillies
- 1 tbsp curry leaves
- Big pinch of asafoetida
- Big pinch of turmeric
- 1 tsp salt or as per your taste
Ingredients for tempering: (measuring cup used = 240ml)
- 1 red chili
- 1 tbsp cooking oil
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1 tsp urad dal
Instructions
- Take one medium sized cucumber.
- Finely chop the cucumber. Refer to the image or video. Take tender cucumber and optionally you can peel it.
- Heat 1 tbsp oil. Prepare tempering using mustard seeds, cumin seeds and urad dal.
- Also add in broken red chillies. Wait until mustard seeds splutter.
- Next add in chopped onion, curry leaves and green chilli.
- Fry until onions turn soft.
- Add in chopped cucumber.
- Add in salt as per taste. Also add in asafoetida and turmeric.
- Fry and cook until cucumber pieces turn slightly soft. Wait until excess heat is reduced.
- Whisk the curd.
- Add it into the cooked cucumber.
- Give a quick mix. You can adjust the salt as per taste. Serve it with rice, chapati, roti or poori.
