Red Pepper and Manchego Tortilla Recipe
A Spanish tortilla featuring a mix of crisp red peppers, tender potatoes, and sliced red onions. This delicious Spanish omelette is seasoned with Manchego cheese, garlic, paprika, and parsley, and paired with a fresh green salad with tomatoes.
Ingredients
Tortilla
- 1 whole bell pepper (red)
- black pepper (to taste)
- 3 whole egg
- 3 sprig fresh parsley
- 2 cloves garlic
- 75 grams manchego cheese
- 3 tbsp olive oil
- 2 whole baking potatoes
- 0.5 whole red onions
- salt (to taste)
- 0.5 tsp smoked paprika
Salad
- 100 grams cherry tomatoes
- 0.5 whole cucumber
- 40 grams Salad leaves
Instructions
- slice the red onions thinly, peel and slice the potatoes, wash and slice the peppers into strips, peel and crush the garlic using the garlic crusher or chop finely
- heat half the oil in the frying pan, place the onions, potatoes peppers and garlic into a frying pan, cook till potatoes are soft, Approx 15 mins
- wash mixed leaves and place in a serving bowl. place a cross on the top of the cucumber, then slice the cucumber to form quarters, sprinkle over the salad leaves, wash the cherry tomatoes and then slice in half, sprinkle over the salad leaves
- add the egg(s) to a bowl, beat the eggs, add the paprika, season with salt and pepper, mix the ingredients
- grate the cheese, wash and finely chop the fresh parsley, empty the contents of the frying pan into a bowl, add the eggs, cheese and parsley to the bowl
- heat the remaining oil in the frying pan, add the potato mixture to the pan, cook for 3 to 4 mins, place under the grill, cook till crisp and golden brown
- cut the tortilla into slices, serve with salad
