add the egg(s) to a bowl, beat the eggs, add the paprika, season with salt and pepper, mix the ingredients
grate the cheese, wash and finely chop the fresh parsley, empty the contents of the frying pan into a bowl, add the eggs, cheese and parsley to the bowl
heat the remaining oil in the frying pan, add the potato mixture to the pan, cook for 3 to 4 mins, place under the grill, cook till crisp and golden brown
cut the tortilla into slices, serve with salad
