Ingredients
  

  • 1 small carrot
  • 1 medium sized potato
  • 8-10 beans
  • 1 small kohlrabi or navilkosu or knol khol
  • Few cauliflower florets (optional)
  • 1/4 cup soaked or fresh green peas
  • 1/4 tsp turmeric powder
  • 1/2 – 1 tsp red chili powder
  • 2 tsp coriander powder
  • 1/2 tsp cumin powder
  • Salt as per your taste

Ingredients for tempering: (measuring cup used = 240ml)

  • 4 tsp cooking oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 bay leaf
  • 4 – 5 curry leaves
  • 1 big onion
  • 1 tomato

Ingredients for grinding:

  • 1/4 cup grated coconut
  • 2 tsp roasted gram or hurigadale
  • 1cm length ginger
  • 3 cloves garlic
  • 1 tsp fennel seeds
  • 1 tsp poppy seeds or gasagase
  • 4 – 5 cashews
  • 1/2 finger length cinnamon
  • 3-4 cloves
  • 1 cardamom
  • 2 tbsp coriander leaves
  • 2 tbsp mint or pudina leaves

Instructions
 

  • Chop all the vegetables. You can take any vegetable of your choice.
  • Transfer all chopped vegetables into a pressure cooker. Add in salt and a pinch of turmeric and cook by making 2 whistles. Please note you should not add onion and tomato.
  • Take all the ingredients listed under "for grinding" as per the measurement.
  • Transfer all the above ingredients into a mixe jar or blender. And make a fine paste using required water. Set it aside.
  • Take 4 tsp of oil in a wok or frying pan and heat it. Now prepare tempering using mustard seeds, cumin seeds, bay leaf and curry leaves.
  • Add in chopped onions and fry until soft.
  • Add in chopped tomatoes and fry until soft.
  • Add in ground spices or masala from step 4 and give a quick stir.
  • Add in dry masala powders like red chili powder, coriander powder, cumin powder and turmeric powder. Give a quick mix.
  • Next add in cooked vegetables from step 2.
  • Add in required water, salt and mix well. Bring it to boil and continue boiling for 5 minutes. Serve it with dosa or poori or chapathi.
