The vegetable kurma bears a resemblance to Karnataka-style veg sagu, with a slight variation. Similar to sagu, this vegetable kurma offers a gentle and delicate flavor profile.

- 1 small carrot
- 1 medium sized potato
- 8-10 beans
- 1 small kohlrabi or navilkosu or knol khol
- Few cauliflower florets (optional)
- 1/4 cup soaked or fresh green peas
- 1/4 tsp turmeric powder
- 1/2 - 1 tsp red chili powder
- 2 tsp coriander powder
- 1/2 tsp cumin powder
- Salt as per your taste
Ingredients for tempering: (measuring cup used = 240ml)
- 4 tsp cooking oil
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1 bay leaf
- 4 - 5 curry leaves
- 1 big onion
- 1 tomato
Ingredients for grinding:
- 1/4 cup grated coconut
- 2 tsp roasted gram or hurigadale
- 1cm length ginger
- 3 cloves garlic
- 1 tsp fennel seeds
- 1 tsp poppy seeds or gasagase
- 4 - 5 cashews
- 1/2 finger length cinnamon
- 3-4 cloves
- 1 cardamom
- 2 tbsp coriander leaves
- 2 tbsp mint or pudina leaves
Chop all the vegetables. You can take any vegetable of your choice.
Transfer all chopped vegetables into a pressure cooker. Add in salt and a pinch of turmeric and cook by making 2 whistles. Please note you should not add onion and tomato.
Take all the ingredients listed under "for grinding" as per the measurement.
Transfer all the above ingredients into a mixe jar or blender. And make a fine paste using required water. Set it aside.
Take 4 tsp of oil in a wok or frying pan and heat it. Now prepare tempering using mustard seeds, cumin seeds, bay leaf and curry leaves.
Add in chopped onions and fry until soft.
Add in chopped tomatoes and fry until soft.
Add in ground spices or masala from step 4 and give a quick stir.
Add in dry masala powders like red chili powder, coriander powder, cumin powder and turmeric powder. Give a quick mix.
Next add in cooked vegetables from step 2.
Add in required water, salt and mix well. Bring it to boil and continue boiling for 5 minutes. Serve it with dosa or poori or chapathi.
