Lobster Salad
Lobster rolls are a quintessential summer dish, but the reality is, you can enjoy them without the traditional split-top hot dog buns (or even melted butter for the Connecticut-style variation). Simply dressed with a light coating of mayo and enhanced with a generous squeeze of lemon juice, the lobster salad shines beautifully on its own, especially when accompanied by slices of luscious avocado. ????
Ingredients
- 1/4 c. mayonnaise
- 1 stalk celery, finely diced
- 2 tbsp. lemon juice
- 2 tbsp. finely chopped chives, plus more for serving
- Kosher salt
- 3 (12-oz.) lobster tails, steamed, meat removed and chopped (3 c.)
- Butterhead lettuce, for serving
- Sliced avocado, for serving
- Lemon wedges, for serving
Instructions
- In a bowl, stir together mayonnaise, celery, lemon juice, and chives. Season with salt. Fold in chopped lobster meat.
