Lazy Man’s Pierogi

Whenever there's a party, I am always asked to prepare this dish. It's a delightful blend of pasta, bacon, mushrooms, and onions.

Ingredients
  

  • 1 (16 ounce) package rotelle pasta
  • ½ pound bacon, chopped
  • 2 onions, chopped
  • ½ pound mushrooms, quartered
  • 1 tablespoon butter
  • 1 (16 ounce) can sauerkraut – rinsed and drained
  • 2 (10.75 ounce) cans condensed cream of mushroom soup
  • salt and pepper to taste

Instructions
 

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Stir in onions and cook until translucent. In a separate pan, saute the mushrooms in butter.
  • In a large bowl, combine pasta, bacon, onion, mushrooms, sauerkraut and condensed soup. Season with salt and pepper. Pour into a 9×13 inch baking dish.
  • Bake in preheated oven for 45 minutes.
