Greek Tomato Salad
This vibrant side dish is a popular addition to our summer barbecues and gatherings. It's so well-loved that I receive requests for it every time, and even the younger crowd enjoys this combination of crisp vegetables with a delicate dressing! If you're not a fan of the flavor of Greek olives, you can easily replace them with regular black olives.
Ingredients
- 4 large tomatoes, cut in wedges
- 1 cucumber, halved lengthwise and sliced
- ½ red onion, chopped
- ½ cup Greek black olives
- ¼ teaspoon chopped fresh basil
- ¼ teaspoon chopped fresh oregano
- ⅓ cup crumbled feta cheese
- 1 (16 fl oz) bottle Greek salad dressing
- ⅛ teaspoon freshly ground black pepper
- 1 sprig fresh basil
Instructions
- Gently mix tomatoes, cucumber, red onion, olives, 1/4 teaspoon chopped basil, and oregano together in a large bowl; top with feta cheese. Pour Greek dressing over salad and season with black pepper. Garnish salad with a sprig of fresh basil.
