Greek Briam Recipe
Briam is a traditional Greek oven-baked dish made with a variety of seasonal vegetables, such as zucchini, potatoes, eggplants, bell peppers, tomatoes, and onions, all seasoned with olive oil and herbs.
Ingredients
- Zucchini (sliced) – 4
- Potatoes (sliced) – 4
- Eggplants (sliced) – 3
- Bell peppers (sliced) – 4
- Tomatoes (diced) – 4
- Onion (thinly sliced) – 1
- Garlic (minced) – 4 cloves
- Extra-virgin olive oil – 1 cup
- Dried oregano – 1 tbsp
- Dried thyme – 1 tbsp
- Salt – to taste
- Pepper – to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, toss the sliced zucchini, potatoes, eggplants, bell peppers, tomatoes, onion, and garlic.
- Drizzle the olive oil over the vegetables and toss to coat evenly.
- Sprinkle dried oregano, thyme, salt, and pepper over the vegetables and mix gently.
- Transfer the seasoned vegetables to a large baking dish, arranging them in an even layer.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and continue baking for an additional 30-40 minutes or until the vegetables are tender and lightly browned.
- Allow the Briam to rest for a few minutes before serving.
