Ingredients
  

  • Zucchini (sliced) – 4
  • Potatoes (sliced) – 4
  • Eggplants (sliced) – 3
  • Bell peppers (sliced) – 4
  • Tomatoes (diced) – 4
  • Onion (thinly sliced) – 1
  • Garlic (minced) – 4 cloves
  • Extra-virgin olive oil – 1 cup
  • Dried oregano – 1 tbsp
  • Dried thyme – 1 tbsp
  • Salt – to taste
  • Pepper – to taste

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, toss the sliced zucchini, potatoes, eggplants, bell peppers, tomatoes, onion, and garlic.
  • Drizzle the olive oil over the vegetables and toss to coat evenly.
  • Sprinkle dried oregano, thyme, salt, and pepper over the vegetables and mix gently.
  • Transfer the seasoned vegetables to a large baking dish, arranging them in an even layer.
  • Cover the dish with aluminum foil and bake for 45 minutes.
  • Remove the foil and continue baking for an additional 30-40 minutes or until the vegetables are tender and lightly browned.
  • Allow the Briam to rest for a few minutes before serving.
