- Bell peppers (sliced) - 4
- Tomatoes (diced) - 4
- Onion (thinly sliced) - 1
- Garlic (minced) - 4 cloves
- Extra-virgin olive oil - 1 cup
- Dried oregano - 1 tbsp
- Dried thyme - 1 tbsp
- Salt - to taste
- Pepper - to taste
Preheat the oven to 375°F (190°C).
In a large bowl, toss the sliced zucchini, potatoes, eggplants, bell peppers, tomatoes, onion, and garlic.
Drizzle the olive oil over the vegetables and toss to coat evenly.
Sprinkle dried oregano, thyme, salt, and pepper over the vegetables and mix gently.
Transfer the seasoned vegetables to a large baking dish, arranging them in an even layer.
Cover the dish with aluminum foil and bake for 45 minutes.
Remove the foil and continue baking for an additional 30-40 minutes or until the vegetables are tender and lightly browned.
Allow the Briam to rest for a few minutes before serving.
