French Consommé Recipe
This dish is served as a soup and sometimes includes additional light ingredients like egg whites or vegetables. Consommé also serves as a base for a variety of dishes, especially soups like French onion soup.
Ingredients
- 1 lb Lean ground beef
- 4 Egg whites
- 1 Carrot (chopped)
- 1 stalk Celery (chopped)
- 1 Leek (chopped)
- 1 Onion (chopped)
- 1 Tomato (chopped)
- 1 Bay leaf
- 1 tsp Thyme
- 1 tsp Black peppercorns
- 8 cups Beef stock
- Salt – to taste
Instructions
- In a large pot, combine ground beef, egg whites, carrot, celery, leek, onion, tomato, bay leaf, thyme, and peppercorns.
- Pour in the beef stock and stir to combine.
- Heat the mixture over medium heat, stirring frequently until it comes to a simmer.
- Reduce the heat to low and let it simmer gently for about 1 hour, without stirring.
- Strain the consommé through a fine mesh sieve lined with cheesecloth to remove the solids and clarify the broth.
- Season with salt to taste.
- Serve hot, garnished with a sprig of thyme or a slice of carrot if desired.
