- 1 lb Lean ground beef
- 4 Egg whites
- 1 Carrot (chopped)
- 1 stalk Celery (chopped)
- 1 Leek (chopped)
- 1 Onion (chopped)
- 1 Tomato (chopped)
- 1 Bay leaf
- 1 tsp Thyme
- 1 tsp Black peppercorns
- 8 cups Beef stock
- Salt - to taste
In a large pot, combine ground beef, egg whites, carrot, celery, leek, onion, tomato, bay leaf, thyme, and peppercorns.
Pour in the beef stock and stir to combine.
Heat the mixture over medium heat, stirring frequently until it comes to a simmer.
Reduce the heat to low and let it simmer gently for about 1 hour, without stirring.
Strain the consommé through a fine mesh sieve lined with cheesecloth to remove the solids and clarify the broth.
Season with salt to taste.
Serve hot, garnished with a sprig of thyme or a slice of carrot if desired.
