Ingredients
  

  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced, or more to taste
  • 1 onion, chopped
  • 4 roma (plum) tomatoes, chopped
  • 2 pounds chicken wings
  • 1 bay leaf, or more to taste
  • 1 cup water
  • 1 teaspoon vegetarian chicken-flavored bouillon (such as Better Than Bouillon®)
  • ¼ cup white vinegar
  • ⅓ cup soy sauce
  • 1 pinch red pepper flakes (Optional)
  • salt and pepper to taste

Instructions
 

  • Heat a large pot over medium heat and add garlic. Cook until just golden; add oil and onion. Cook until onion is shiny, 1 to 3 minutes. Add tomatoes. Add chicken and bay leaf. Add water and bouillon and bring stew to a boil, about 5 minutes.
  • Add vinegar to the stew in the pot. Cover and cook 10 to 15 minutes, adding extra water if necessary.
  • Add soy sauce to the stew and simmer 40 minutes more.
  • Season with red pepper, salt, and black pepper.
