Filipino Sinarsahang
Sinarsahang is a classic Filipino chicken and tomato stew that practically cooks itself as it gently simmers on the stove.
Ingredients
- 1 tablespoon vegetable oil
- 3 cloves garlic, minced, or more to taste
- 1 onion, chopped
- 4 roma (plum) tomatoes, chopped
- 2 pounds chicken wings
- 1 bay leaf, or more to taste
- 1 cup water
- 1 teaspoon vegetarian chicken-flavored bouillon (such as Better Than Bouillon®)
- ¼ cup white vinegar
- ⅓ cup soy sauce
- 1 pinch red pepper flakes (Optional)
- salt and pepper to taste
Instructions
- Heat a large pot over medium heat and add garlic. Cook until just golden; add oil and onion. Cook until onion is shiny, 1 to 3 minutes. Add tomatoes. Add chicken and bay leaf. Add water and bouillon and bring stew to a boil, about 5 minutes.
- Add vinegar to the stew in the pot. Cover and cook 10 to 15 minutes, adding extra water if necessary.
- Add soy sauce to the stew and simmer 40 minutes more.
- Season with red pepper, salt, and black pepper.
