Sinarsahang is a classic Filipino chicken and tomato stew that practically cooks itself as it gently simmers on the stove.

- 1 tablespoon vegetable oil
- 3 cloves garlic, minced, or more to taste
- 1 onion, chopped
- 4 roma (plum) tomatoes, chopped
- 2 pounds chicken wings
- 1 bay leaf, or more to taste
- 1 cup water
- 1 teaspoon vegetarian chicken-flavored bouillon (such as Better Than Bouillon®)
- ¼ cup white vinegar
- ⅓ cup soy sauce
- 1 pinch red pepper flakes (Optional)
- salt and pepper to taste
Heat a large pot over medium heat and add garlic. Cook until just golden; add oil and onion. Cook until onion is shiny, 1 to 3 minutes. Add tomatoes. Add chicken and bay leaf. Add water and bouillon and bring stew to a boil, about 5 minutes.
Add vinegar to the stew in the pot. Cover and cook 10 to 15 minutes, adding extra water if necessary.
Add soy sauce to the stew and simmer 40 minutes more.
Season with red pepper, salt, and black pepper.
