
Eggless Strawberry Cashew Cake for Valentines Day
A moist, eggless cake infused with the sweetness of strawberries and the richness of cashews — a perfect romantic treat to celebrate love on Valentine’s Day. Beautifully decorated and full of flavor, it’s ideal for gifting or sharing.
Ingredients
For Batter
- Butter, unsalted (मखन) – 180 gms/ ¾ cup
- Sugar, fine grain (चीनी) – 180 gms/ 15 tbsp
- Vanilla essence (वनिला) – 2 tsp
- Curd (दही) – 150 gms/ ½ cup
- Banana, medium (केला) – 2 nos
- Cashew nuts (काजू) – 50 gms/ ⅓ cup
- All-purpose flour (मैदा) – 180 gms/ 1 cup+2 tbsp
- Baking Powder (बेकिंग पाउडर) – 1 tsp
- Baking soda (बेकिंग सोडा) – 1 tsp
- Strawberry (स्ट्रोबेरी) – 12 nos
For Icing
- Cream cheese (क्रीम चीज़) – 100 gms
- Sugar, Powdered (चीनी) – 75 gms
- Whipped cream (फिट्टी हुई क्रीम) – 80 gms
For Garnish
- Strawberries – few
- Sugar Balls – handful
Instructions
For Cake Batter
- Soak the cashews for an hour and then puree them in a blender along with banana and yogurt. Roughly chop the strawberries and keep aside.Begin by creaming together butter and sugar. Add in the cashew banana paste and mix together. Now add in the dry ingredients and with a spatula fold them into the batter. Drop the strawberries and fold again.
For Icing
- Whip together the cream and butter until soft and light. Add in the powdered sugar and whisk till incorporated. Store in a cold place till ready to serve.
For Assembling
- Remove the cake and place it outside for 2 mins, then hold the butter paper and pick up the cake to place it on a cooling rack. Cool down the cake completely and then trim its edges a bit to make it even. Keep it aside.
