Ingredients
  

  • Cassava flour – 2 cups
  • Precooked cornmeal – 1 cup
  • Feta cheese (crumbled) – 1 cup
  • Mozzarella cheese (shredded) – 1 cup
  • Butter (softened) – 1/2 cup
  • Eggs – 2
  • Baking powder – 1 tsp
  • Salt – 1/2 tsp
  • Sugar – 1 tbsp

Instructions
 

  • Preheat the oven to 375°F and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the cassava flour, precooked cornmeal, crumbled feta cheese, shredded mozzarella cheese, softened butter, eggs, baking powder, salt, and sugar.
  • Mix the ingredients together until a soft, sticky dough forms.
  • Using your hands, shape the dough into small balls or rounds, about 2 inches in diameter.
  • Place the dough balls on the prepared baking sheet, leaving some space between each one.
  • Bake in the preheated oven for 20-25 minutes, or until the Pan de Bono is golden brown and cooked through.
  • Remove from the oven and allow to cool slightly before serving.
