Chorba Frik Recipe
Chorba Frik is a North African soup made with cracked wheat (frik), lamb, vegetables, and a mix of local spices. Traditionally enjoyed to break the fast during Ramadan, this hearty soup is valued for its rich nutrition and satisfying warmth.
Ingredients
- 1 lb Lamb (cubed)
- 1 Onion (finely chopped)
- 1 Carrot (diced) – 1
- 1 stalk Celery (diced)
- 2 tbsp Tomato paste
- 1/2 cup Frik (cracked wheat)
- 1 cup Chickpeas (cooked)
- 2 cloves Garlic (minced)
- 1 tsp Ground cumin
- 1 tsp Ground coriander
- 1/2 tsp Ground cinnamon
- 1/4 cup Fresh cilantro (chopped)
- Salt and pepper (to taste)
- 2 tbsp Vegetable oil – 2 tbsp
- 6 cups Water or beef broth – 6 cups
Instructions
- Heat vegetable oil in a large pot over medium heat. Add lamb and cook until browned.
- Add onion, carrot, celery, and garlic. Cook until vegetables are softened.
- Stir in tomato paste, cumin, coriander, and cinnamon. Cook for another minute.
- Add water or beef broth, frik, and chickpeas. Bring to a boil, then reduce heat and simmer for about 30 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped cilantro.
