Chocolate-Orange Rice Pudding
An American twist on the beloved Filipino comfort dish Champorado. This can be enjoyed either piping hot or refreshingly cold. Enhance the presentation with a sprinkle of orange zest for decoration or drizzle some evaporated milk on top just before serving.
Ingredients
- 5 ½ cups milk
- 1 cup Arborio rice
- ⅔ cup white sugar
- 2 tablespoons orange juice
- 1 ½ teaspoons grated orange zest
- 2 tablespoons orange liqueur
- 1 tablespoon unsweetened cocoa powder
- 1 cup semisweet chocolate chips
Instructions
- Stir milk, rice, sugar, orange juice, and orange zest together in a heavy saucepan; bring to a boil, reduce heat to medium-low, and cook, stirring frequently, until the rice is tender, and the mixture is thickened, 35 to 40 minutes.
- Remove the saucepan from heat. Stir orange liqueur and cocoa powder through the rice mixture; add chocolate chips and stir until melted into the pudding.
