Birthday Cake Cookies

Not only are they much easier and quicker to make than baking and decorating a cake, but you can also conveniently double the recipe or prepare it in advance!If you prefer to plan ahead, simply scoop the cookie dough onto a baking sheet lined with parchment paper and place it in the freezer. Once the dough balls are completely frozen, transfer them to a resealable plastic bag. The best part? There's no need to thaw the dough before baking! Just transfer the frozen dough to another parchment paper-lined baking sheet and bake as usual. The cookies may require a few extra minutes in the oven, but the end result will be absolutely worth it.
Ingredients
- 1 box Funfetti cake mix
- 1 tsp. baking powder
- 2 large eggs
- 1/2 c. (1 stick) butter, softened
- 1 tsp. pure vanilla extract
- 1/2 c. rainbow sprinkles
Instructions
- Preheat oven to 350° and line two baking sheets with parchment paper.
- In a large bowl, combine cake mix and baking powder. Add eggs, butter, and vanilla, then fold in sprinkles. Scoop out dough with a medium cookie scoop and place on a baking sheet, about 1" apart.
- Bake until slightly golden, 12 to 13 minutes. Let cool.
