In Karnataka, there are numerous variations of beans palya or beans stir fry recipes. This particular recipe is the simplest and preferred by many. It doesn't involve grinding or the use of onions, yet it still tastes delicious. It is an ideal recipe for bachelors, requiring minimal effort. However, you can also prepare beans palya with onions and ground coconut, and I will share those recipes soon. Beans are a versatile vegetable that can be used in various preparations, including sambar.

Ingredients
  

  • 250gm beans or huruli kayi
  • 1/2 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp channa dal
  • 1 tbsp cooking oil
  • 1 red chili
  • A big pinch turmeric powder
  • A big pinch asafoetida
  • 5 – 6 curry leaves
  • 1 – 2 green chilies
  • 2 tbsp grated coconut
  • 1 tbsp chopped coriander leaves (optional)
  • Little jaggery (optional)
  • Salt as per your taste
  • 2 tbsp water

Instructions
 

  • Try to buy tender green beans. Take out the ends and strings (tough fibres) of the beans. Wash and chop them into 1cm length pieces.
  • Take oil in a frying pan and heat it. Add in mustard seeds, urad dal and channa dal.
  • When mustard seed splutters, add in broken red chili, turmeric powder, asafoetida and curry leaves.
  • Add in chopped beans, slit green chilies and give a quick mix.
  • Add in salt and little jaggery (optional).
  • Fry for 2 minutes under high flame. Then add in 2 tbsp of water.
  • Close the lid and cook under low flame.
  • Wait until beans are cooked. If required add more water and cook until beans are soft and cooked. Now add in grated coconut and finely chopped corinader leaves.
  • Give a quick mix and switch off the stove. Serve it with hot rice or chapathi.
