Try to buy tender green beans. Take out the ends and strings (tough fibres) of the beans. Wash and chop them into 1cm length pieces.
Take oil in a frying pan and heat it. Add in mustard seeds, urad dal and channa dal.
When mustard seed splutters, add in broken red chili, turmeric powder, asafoetida and curry leaves.
Add in chopped beans, slit green chilies and give a quick mix.
Add in salt and little jaggery (optional).
Fry for 2 minutes under high flame. Then add in 2 tbsp of water.
Close the lid and cook under low flame.
Wait until beans are cooked. If required add more water and cook until beans are soft and cooked. Now add in grated coconut and finely chopped corinader leaves.
Give a quick mix and switch off the stove. Serve it with hot rice or chapathi.
