
Baked Potatoes, Spicy Mayo
Baked Potatoes with Spicy Mayo is a flavorful and easy-to-make appetizer that combines crispy, oven-baked potato wedges or slices with a creamy, tangy, and mildly spicy mayonnaise-based sauce. The potatoes are seasoned and roasted to golden perfection, while the spicy mayo adds a zesty kick, making it a perfect party snack or side dish. Ingredients
For the Potatoes:
- 2 cups Baby Potatoes
- Salt – to taste
- 1 tsp Chaat Masala
- 1 tbsp Garlic (chopped)
- 2 tbsp Coriander (chopped)
- 1 tbsp Mustard Oil
- 2 tbsp Lemon Juice
For the Spicy Mayo:
- 3 tbsp Mayonnaise (vegetarian)
- 3/4 tsp Kashmiri Chilli Powder
- 1/2 tsp Chaat Masala
- 1 tbsp Coriander (chopped)
For Garnish:
- 2 tbsp Onion (chopped)
- 2 tbsp Tomato (chopped)
- Handful of Coriander (chopped)
Instructions
- Wash and pat dry the potatoes and cut them from the centre to divide into 2. Place them on to a baking tray and sprinkle salt, chaat masala, garlic, coriander, oil and lemon juice. Mix them and put them in a preheated oven to bake them at 180c for 25-30mins.
- Check if the potatoes are cooked, remove them and put them in a bowl or a platter.
- For spicy mayonnaise mix together mayonnaise, chilli powder, chaat masala and chopped coriander. Drizzle on top of the potatoes and sprinkle with chopped onions, tomatoes and freshly chopped coriander.
- Serve hot or warm.
