Ingredients
  

For the Potatoes:

  • 2 cups Baby Potatoes
  • Salt – to taste
  • 1 tsp Chaat Masala
  • 1 tbsp Garlic (chopped)
  • 2 tbsp Coriander (chopped)
  • 1 tbsp Mustard Oil
  • 2 tbsp Lemon Juice

For the Spicy Mayo:

  • 3 tbsp Mayonnaise (vegetarian)
  • 3/4 tsp Kashmiri Chilli Powder
  • 1/2 tsp Chaat Masala
  • 1 tbsp Coriander (chopped)

For Garnish:

  • 2 tbsp Onion (chopped)
  • 2 tbsp Tomato (chopped)
  • Handful of Coriander (chopped)

Instructions
 

  • Wash and pat dry the potatoes and cut them from the centre to divide into 2. Place them on to a baking tray and sprinkle salt, chaat masala, garlic, coriander, oil and lemon juice. Mix them and put them in a preheated oven to bake them at 180c for 25-30mins.
  • Check if the potatoes are cooked, remove them and put them in a bowl or a platter.
  • For spicy mayonnaise mix together mayonnaise, chilli powder, chaat masala and chopped coriander. Drizzle on top of the potatoes and sprinkle with chopped onions, tomatoes and freshly chopped coriander.
  • Serve hot or warm.
