For the Potatoes:
- 2 cups Baby Potatoes
- Salt – to taste
- 1 tsp Chaat Masala
- 1 tbsp Garlic (chopped)
- 2 tbsp Coriander (chopped)
- 1 tbsp Mustard Oil
- 2 tbsp Lemon Juice
For the Spicy Mayo:
- 3 tbsp Mayonnaise (vegetarian)
- 3/4 tsp Kashmiri Chilli Powder
- 1/2 tsp Chaat Masala
- 1 tbsp Coriander (chopped)
For Garnish:
- 2 tbsp Onion (chopped)
- 2 tbsp Tomato (chopped)
- Handful of Coriander (chopped)
Wash and pat dry the potatoes and cut them from the centre to divide into 2. Place them on to a baking tray and sprinkle salt, chaat masala, garlic, coriander, oil and lemon juice. Mix them and put them in a preheated oven to bake them at 180c for 25-30mins.
Check if the potatoes are cooked, remove them and put them in a bowl or a platter.
For spicy mayonnaise mix together mayonnaise, chilli powder, chaat masala and chopped coriander. Drizzle on top of the potatoes and sprinkle with chopped onions, tomatoes and freshly chopped coriander.
Serve hot or warm.
