I find these summery Greek fries to be the perfect accompaniment for grilled lamb or kofta as a side dish.

Ingredients
  

  • 1 tablespoon Greek seasoning
  • 1 teaspoon grated lemon zest
  • salt and ground black pepper to taste
  • 2 large potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 2 ounces feta cheese, crumbled
  • 2 tablespoons chopped fresh mint

Instructions
 

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix Greek seasoning, lemon zest, salt, and pepper together in a small bowl.
  • Spread potatoes into a single layer on a baking sheet; drizzle with oil and stir until coated. Sprinkle seasoning mixture evenly over top.
  • Remove from the oven and immediately sprinkle feta cheese and mint over top.
