These pancakes are made with oat flour, making them suitable for gluten-free pancake enthusiasts and anyone who enjoys the slightly nutty flavor of oats. As an added bonus, oats are high in fiber, aiding in the body's sugar processing, perfect for drizzling that generous amount of maple syrup over your stack.
Oat flour is readily available in most supermarkets, but if you can't find it, you can easily make your own using rolled oats. Simply place 3/4 cup of old-fashioned oats in a food processor and process until finely ground, about 30 seconds. This should yield approximately 3/4 cup of oat flour. Any leftovers can be frozen and toasted for reheating at a later time.

Ingredients
  

  • 3/4 c. oat flour
  • 3/4 tsp. baking powder
  • 1/4 tsp. kosher salt
  • 1 large egg
  • 1/2 c. whole milk
  • 1 tsp. maple syrup, plus more for serving
  • 1/2 tsp. pure vanilla extract
  • Olive oil cooking spray
  • Greek yogurt and fresh fruit, for serving

Instructions
 

  • In a medium bowl, whisk flour, baking powder, and salt. In another medium bowl, whisk egg, milk, butter, syrup, and vanilla. Fold dry ingredients into egg mixture until just combined.
  • In another medium bowl, whisk milk, egg, butter, maple syrup, and vanilla. Fold dry ingredients into wet ingredients until just combined.
  • Grease a 6" pie dish with cooking spray, then add one-quarter (about 1/4 cup) of batter. Place dish in an air-fryer basket. Cook at 400° until pancake is puffed and lightly golden, about 3 minutes. Repeat with remaining batter.
  • Top pancakes with yogurt, more syrup, and sliced fruit.
