Grease a 6" pie dish with cooking spray, then add one-quarter (about 1/4 cup) of batter. Place dish in an air-fryer basket. Cook at 400° until pancake is puffed and lightly golden, about 3 minutes. Repeat with remaining batter.
Top pancakes with yogurt, more syrup, and sliced fruit.
