Ingredients
  

  • 1 lb Lean ground beef
  • 4 Egg whites
  • 1 Carrot (chopped)
  • 1 stalk Celery (chopped)
  • 1 Leek (chopped)
  • 1 Onion (chopped)
  • 1 Tomato (chopped)
  • 1 Bay leaf
  • 1 tsp Thyme
  • 1 tsp Black peppercorns
  • 8 cups Beef stock
  • Salt – to taste

Instructions
 

  • In a large pot, combine ground beef, egg whites, carrot, celery, leek, onion, tomato, bay leaf, thyme, and peppercorns.
  • Pour in the beef stock and stir to combine.
  • Heat the mixture over medium heat, stirring frequently until it comes to a simmer.
  • Reduce the heat to low and let it simmer gently for about 1 hour, without stirring.
  • Strain the consommé through a fine mesh sieve lined with cheesecloth to remove the solids and clarify the broth.
  • Season with salt to taste.
  • Serve hot, garnished with a sprig of thyme or a slice of carrot if desired.
