Vegan Apple Khoresh with Seitan
While the original Persian recipe features chicken, this version opts for seitan to create a vegan variation. Enjoy it over a bed of saffron rice for a delightful meal.
Ingredients
- 2 tablespoons olive oil
- 2 medium onions, thinly sliced
- ½ cup seitan, cut into chunks
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon ground cinnamon
- ½ teaspoon ground turmeric
- ½ teaspoon ground coriander
- 5 tart cooking apples, peeled and thinly sliced
- 1 cup apple juice
- 1 tablespoon lime juice
Instructions
- Heat olive oil in a skillet over medium heat. Add onions and cook until nearly browned, 7 to 10 minutes. Add seitan, salt, black pepper, cinnamon, turmeric, and coriander and cook for 10 minutes more. Add apples, apple juice, and lime juice and cook until apples are tender, 15 to 30 minutes more. Adjust seasonings, if necessary.
