Watermelon rind (white part) chutney

By preparing watermelon rind chutney, you not only indulge in its scrumptious taste but also reduce waste, making it environmentally friendly as well.
Ingredients
- 2 cups watermelon rind
- 1 cup grated coconut
- 1-2 red chili / green chili
- 4 tsp urad dal
- 1/4 tsp mustard
- 1 tsp cooking oil
- 1/4 gooseberry sized tamarind
- Salt as per your taste
Instructions
- Wash and cut the watermelon, take out the rind (white part) of the watermelon and cut into 1 inch pieces. Now cook them in a cooker or a vessel by adding very liitle water and salt.
- Take a wok or frying pan, add oil, chili, urad dal and mustard seeds. Fry them till the urad dal turns golden brown.
- Wait till the cooked watermelon rind becomes cool. Once it is cool put it in a mixie jar, add coconut and grind it for a minute. Then add tamarind and fried masala and grind it again for 10 seconds. Chutney is ready. Temper it with mustard and red chili but its optional. Serve it with hot rice or dosa or chapathi.
