Watermelon Quinoa Salad

However, when we desire a heartier version of this staple salad, we introduce one of our beloved grains: quinoa. This watermelon quinoa salad encompasses everything we adore about the traditional summer salad: the combination of mint, feta cheese, red onion, cucumber, a drizzle of balsamic glaze, and, of course, the juicy watermelon. By incorporating quinoa, one of our favorite grains, we not only introduce an additional layer of texture but also provide a nutritious boost. Whether served as a satisfying side dish for a barbecue or as a light and invigorating summer lunch, this innovative twist on a classic salad will invigorate your summer dining experience.Tip: If you find raw red onions to be a bit too pungent, you can soak the sliced onions in water for approximately 15 minutes. Afterwards, drain and pat them dry before incorporating them into the salad. This simple technique helps to mellow out the strong and intense flavor of the onion.
Ingredients
- 2 c. quinoa, cooked and cooled
- 3 c. watermelon, cut in 1/2-inch cubes
- 1 c. cucumber, cut into 1/2-inch cubes
- 1/2 small red onion, thinly sliced
- 1/2 c. feta
- 1/2 c. mint leaves, torn
- 1/4 c. balsamic glaze
- Kosher salt
Instructions
- Toss all ingredients together, reserving some feta, mint, and balsamic for garnish. Season with salt and top with extra feta, mint, and balsamic glaze. Serve.
