Turkish Mucver Recipe
Mücver dates back to the period between the 14th and early 20th centuries, during the Ottoman Empire. Zucchini, in particular, was one of the most popular vegetables in Ottoman cuisine and remains a staple in Turkish cooking today, appearing in dishes from mücver to zucchini stews and pies. Mücver is a Turkish vegetable fritter made from shredded vegetables, eggs, flour, and seasonings such as parsley, dill, mint, and green onions.
Ingredients
- Green zucchinis – 3
- Eggs – 3
- Flour – 3 tbsp
- Parsley, minced– 1 handful
- Green onions or dill – ½ cup
- Baking soda – ½ tsp
- Salt – to taste
- Black pepper – to taste
- Vegetable oil to fry
Instructions
- Peel and thinly grate the zucchinis.
- Squeeze all the water from the zucchinis using your hands,
- Whisk the eggs and mix with zucchinis until well combined,
- Add the baking soda, salt, and black pepper, then stir,
- Add the flour slowly to the mixture while stirring,
- Finally incorporate in the minced green onions or dill and stir,
- Heat some vegetable oil in a frying pan,
- Using a spoon, form round flat patties and place in hot oil,
- Shallow fry on both sides without crowding the pan too much,
- Pour over some crushed garlic and yoghurt mixture and serve!
