
Traditional Olie Bollen (Dutch Doughnuts) Recipe
Oliebollen is a Dutch deep-fried pastry made from a dough of flour, milk, salt, and sugar, with yeast used to leaven the mixture.
Ingredients
- White Flour – 400g
- Salt – 2 tsp
- Fresh yeast – 20g
- Whole milk, Lukewarm – 300 ml
- Sugar – 1 tbsp
- Whole eggs – 2
- Raisins, soaked, washed and dried – 200g
- Oil for deep frying
- Powdered sugar for dusting
Instructions
- Stir the yeast into the lukewarm milk and let it sit for a few minutes to get frothy.
- In a bowl mix the flour, salt and sugar.
- Add the eggs and the yeast-milk mixture to the flour and mix with a wooden spoon.
- Keep mixing for about 10 minutes to until a soft dough forms.
- Mix in the raisins.
- Cover the bowl and leave to rise for about 1 hour.
- Heat the oil in a deep pan or fryer.
- Use an ice cream scoop to create even balls. Scoop the dough pieces into the hot oil.
- Fry the balls until golden brown.
- Remove the oliebol Len from the oil with a slotted spoon and place them in a paper towel to drain off the excess oil. Repeat with the remaining dough.
- After all the pieces have been fried, transfer to a fresh plate and dust with powdered sugar.
