Ingredients
  

  • 3 tomatoes
  • 1 onion
  • 1 tsp chopped ginger-garlic or paste
  • 1/2 tsp cumin seeds
  • Few curry leaves
  • 1 – 2 green chilli
  • 3 tbsp cooking oil / Ghee
  • Some coriander leaves
  • Big pinch turmeric powder
  • Salt as per your taste

Ingredients for grinding:

  • 1/4 cup grated coconut
  • 2 tsp sesame seeds (or peanuts)
  • 3 – 4 red chillies
  • 1 tsp coriander seeds
  • 1/2 cumin seeds
  • 1/4 tsp methi seeds
  • 2 cardamom
  • 2cm length cinnamon
  • 4 – 5 cloves

Instructions
 

  • Take the ingredients listed under "for grinding" like red chillies, sesame seeds (or peanuts), coriander seeds, cumin seeds and methi seeds in a pan.
  • Roast until sesame seeds start to splutter under medium flame. Reduce the flame and add in cardamom, cinnamon and cloves. Roast everything together for few more seconds and switch off the stove.
  • Next take coconut in a mixie jar.
  • Add in roasted ingredients and required water.
  • Grind it until fine paste. Masala is ready, keep it aside.
  • Next heat oil in a pan. You need to add 3 – 4 tbsp of oil for this kurma. Add in cumin seeds.
  • Wait until cumin seeds splutter. Add in chopped onion, ginger-garlic and curry leaves. Start frying under medium flame.
  • You can add slit green chillies for added spiciness. Fry until tomatoes are soft.
  • Next add in chopped tomatoes and saute for a minute.
  • Add in a tsp of salt and a big pinch of turmeric powder. Give a quick mix.
  • Close the lid and allow it to cook for few inutes.
  • Add in ground masala.
  • Also add in required water. Close the lid and allow it to cook for 5 minutes.
  • Open the lid. Adjust salt, sweet and sour level. You can add jaggery and tamarind juice as per your taste. I have added only the salt.
  • At the end sprinkle coriander leaves and switch off the stove. Serve it with dosa or poori or chapathi or rice.
