Ingredients
  

For Dressing

  • 1tsp Garlic chopped
  • a pinch Salt
  • (powdered) – 3 tbsp Gur (Jaggery)
  • 2tsp Ginger chopped
  • 3 tbsp Lemon juice
  • (light) – 2tbsp Soya sauce
  • 1 tbsp Chilli sauce
  • 1tbsp Peanut Butter
  • 1tbsp Sesame oil

For Salad

  • 2cups Mango sliced
  • 1cup Cabbage (shredded)
  • ½ cup Capsicum sliced
  • 1cup Purple cabbage (shredded)
  • Raw papaya shredded – 1cup
  • Carrot juliennes – 1 cup
  • ½ cup Spring Onions Chopped
  • handful Mint leaves
  • a pinch Salt
  • 2tbsp Lemon juice
  • Sesame (toasted) – 1tbsp

Instructions
 

  • To prepare the Thai dressing for the salad place the garlic in a moter pestle and pound it with little salt to make it into a paste. Add this paste to a bowl add in jaggery, ginger, lemon, soya sauce, chilli sauce, peanut butter and a dash of sesame oil whisk it well to make a homogenous dressing.
  • Next step is to mix together all the fruits & veggies and add some salt and lemon juice to it. Pour over the dressing and toss them together. Portion out the salad in a platter and garnish with toasted sesame and serve.
