Spaghetti with Pureed Tomatoes, Red Pepper & Herbs Recipe

Spaghetti served with a flavorful sauce made from pureed red peppers and fresh tomatoes, enhanced with basil, mint, and garlic. The dish is topped with finely grated Parmesan cheese and accompanied by crispy garlic bread.

Ingredients
  

Pasta

  • 0.5 whole bell pepper (red)
  • black pepper (to taste)
  • 6 sprig fresh basil
  • 6 sprig fresh mint
  • 1 cloves garlic
  • 1.5 tbsp olive oil
  • 25 grams parmesan or pecorino cheese
  • salt (to taste)
  • 200 grams spaghetti
  • 6 whole tomatoes

Bread

  • 1 stick garlic bread

Instructions
 

  • half fill a pan with water and boil, add a spot of olive oil and a pinch of salt to the boiling water, add the pasta to the boiling water and cook until tender but with a slight bite, set the oven to 200C 400F or gas mark 6
  • half fill a medium pan with water and boil, prick tomatoes and place in boiling water for 5 mins
  • wash and slice the peppers into strips
  • drain the tomatoes and place in cold water, remove the skins from the tomatoes, chop tomatoes removing the hard central core, place the tomatoes in the food processor, season with salt and pepper
  • put the garlic bread on the baking tray and place in the oven follow cooking instructions on packaging
  • peel and crush the garlic using the garlic crusher or chop finely, wash and finely chop the fresh mint, add the peppers, mint, garlic to the food processor, blend until smooth
  • wash and tear the basil leaves, drain the pasta, add the pasta to a frying pan, add the oil, pureed sauce and basil to the frying pan, cook for 5 mins
  • remove the garlic bread from the oven
  • share the contents of the pan equally between the serving bowls, serve with grated parmesan and garlic bread
