
Soupy Veg Noodles | Masala Noodles
Soupy Veg Noodles, also known as Masala Noodles, is a comforting and flavorful dish that combines the goodness of vegetables with the warmth of a mildly spiced broth. Made with noodles cooked in a savory, masala-infused soup base, this dish is packed with colorful veggies like carrots, capsicum, and cabbage, offering both taste and nutrition. Ingredients
- Butter (मक्खन) – 2 tbsp
- Garlic, chopped (लहसुन) – 2 tsp
- Ginger, chopped (अदरक) – 2 tsp
- Green Chilli, chopped (हरि मिर्च) – 1 no
- Turmeric (हल्दी) – ½ tsp
- Tastemaker (टेस्ट मेकर) – 2 pkt
- Chilli Sauce (चिल्ली सॉस) – 1 tbsp
- Mushrooms (मशरुम) – 5-6 nos
- Broccoli, tiny florets (ब्रोकली) – handful
- Carrot, chopped (गाजर) – ⅓ cup
- Water (पानी) – 2 cups
- Instant Noodles, crushed (इंस्टेटन नूडल्स) – ¼ pkt
- Spring Onions, chopped (हरा प्याज़) – handful
- Soya Sauce, light (सोया सॉस) – 2 tbsp
- Instant Noodles (इंस्टेटन नूडल्स) – 1¾ pkt
Instructions
- Wash the veggies and cut the mushrooms into 2. Start by melting butter in a pan and sauté chopped garlic, ginger and green chilli. Add turmeric, tastemaker, chilli sauce and give it a quick stir and then add in the mushrooms, broccoli and chopped carrots. Cook them for 3-4 mins and then pour in 2 cups of water or stock.
- Take about 1/4 cup of the crushed instant noodles which are usually sitting in the bottom of pack and grind them to a fine powder. Once the soup comes to a boil and add powdered instant noodles. This will add taste and also thicken the soup. Add a dash of light soya sauce and cook till veggies are tender. Check and adjust the seasoning.
- In a separate pan boil water and boil the noodles till they are soft but firm. Drain water and place the cooked noodles on a bowl then pour the soup around. Sprinkle chopped spring onions and serve it hot. Enjoy your flavourful soupy veg noodles.
