
Soupy Veg Noodles

Ingredients
For Soup
- Carrot, large (गाजर) – 1 no
- Broccoli, small (ब्रोकली) – 1 no
- Mushrooms (मशरुम) – 5-6 nos
- Tomato, large (टमाटर) – 1 no
- Onion, medium (प्याज़) – 1 no
- Butter (मक्खन) – 2½ tbsp
- Garlic, chopped (लहसुन) – 2 tsp
- Ginger, chopped (अदरक) – 2 tsp
- Green Chilli, chopped (हरि मिर्च) – 1 no
- Tastemaker (टेस्ट मेकर) – 2 pkt
- Turmeric (हल्दी) – ½ tsp
- Chilli Sauce (चिल्ली सॉस) – 1 tbsp
- Instant Noodles, powdered (इंस्टेटन नूडल्स चुरा) – 3-4 tbsp
- Water (पानी) – 2½ cups
- Soya Sauce, light (सोया सॉस) – 1½ tbsp
- Salt (नमक) – to taste
- Instant Noodles (इंस्टेटन नूडल्स) – 2 pkt
- Spring Onions, chopped (हरा प्याज़) – handful
Instructions
- To start, grind a few broken instant noodles into a powder. Next, finely dice some carrots, cut broccoli into florets, dice mushrooms, tomatoes and onions.
- In a pan, melt some butter and then add chopped garlic, ginger and chopped green chilies. Give a quick stir. After that, add the diced onions and carrots. Cook on hush heat for 3 mins and then mix in mushrooms along with salt, tastemaker (seasoning), turmeric, salt and chilli sauce (optional). Give a thorough mix and then sprinkle the powdered instant noodles. Cook the mixture until the vegetables dry out.
- Next pour water and bring it to a boil. Once the soup thickens slightly, stir in soy sauce, add broccoli and the diced tomatoes. Finally add chopped green onions and turn off the heat.
- Heat 2½ cups of water in a fresh pan and add the instant noodles and cook till they are soft. Drain the water and place the noodles in the center of a soup plate. Pour the veggies soup around it and serve it hot.
