Smoky Roasted Tomatoes
Roasting cherry tomatoes enhances their flavor and gives them a luscious, silky texture. They're incredibly versatile: toss them with pasta or risotto, layer them in sandwiches, or pair them with cheese and bread on a grazing board.
Ingredients
- 1 pt. grape tomatoes
- 2 Tbsp. olive oil
- 1 tsp. coriander seeds, crushed
- 1/4 tsp. cumin seeds, crushed
- Kosher salt and pepper
- Basil, for serving
Instructions
- Heat oven to 425°F. On small rimmed baking sheet, toss tomatoes, oil, coriander, cumin, and 1/4 teaspoon each salt and pepper. Roast until tomatoes have begun to break down and are juicy, 15 to 20 minutes. Sprinkle with basil.
