
Rocket & Cheese Pakora
Crispy, golden fritters made with fresh rocket leaves and gooey cheese, coated in a spiced gram flour batter. This fusion snack offers a perfect balance of crunch, creaminess, and subtle peppery flavors, ideal for tea-time or party starters.
Ingredients
- Rocket Leaves – 1 cup
- Spinach leaves – 1 cup
- Green Chilly chopped – 1 no
- Ajwain – 1 tsp
- Salt – 1 tsp
- Turmeric – 1/2 tsp
- Coriander Seeds – 1 tbsp
- Onion sliced – 1cup
- Cheese Cubes – 10 nos
- Besan – 1 cup
- Hing – 1/2 tsp
- Red Chilli powder – 1 tsp
- Ginger Chopped – 1tbsp
- Oil – to Deep Fry
Instructions
- To begin, prepare the batter by mixing gram flour, rice flour, red chili powder, turmeric, carom seeds, and salt in a bowl. Gradually add water while whisking until you get a smooth, medium-thick batter that is neither too thick nor too runny.
- Next, make the filling by combining chopped rocket leaves with grated or cubed cheese. Lightly season this mixture with a pinch of salt and chili flakes, if you prefer a slightly spicier flavor.
- Once the filling is ready, take a small portion, press it gently into a rough ball or patty shape, and dip it into the prepared batter. Ensure each piece is well coated before frying.
- Heat oil in a deep pan over medium heat and gently drop the coated pieces into the hot oil. Fry until the pakoras turn golden brown and crispy on all sides. Remove them and drain on paper towels to absorb excess oil. Serve hot with mint chutney or spiced ketchup.
