Pork Chops with Apples

Pork Chops with Apples

Food Wiki
Pork chops often get a bad reputation for being dry and unexciting, but not these ones! Instead, these effortless pork chops are gently simmered in apple cider along with apples and onions, resulting in an explosion of flavors. They have a subtle sweetness and a remarkable tenderness. As a bonus, the cider reduces down into a delightful glaze that works wonders when drizzled over a side of rice and veggies.
Cooking times will vary depending on whether your pork chops are boneless and their thickness. Our best tip for achieving perfectly cooked pork chops every time is to ensure they are all the same size when they enter the pan. If needed, feel free to trim them or remove the bones to achieve uniformity. If you prefer not to cut them, keep in mind that you may need to remove some chops while others continue cooking. Another foolproof method for guaranteeing that each chop is cooked to perfection is by using a meat thermometer. Aim for a center temperature of 145°F for the juiciest and most flavorful bite.

  •  Pork Chops with Apples
  • 1 tsp. smoked paprika
  • Kosher salt
  • Freshly ground black pepper
  • 2 tbsp. extra-virgin olive oil
  • 1 apple, cored and thinly sliced
  • 1 small onion, halved and thinly sliced

  • 2 tsp. fresh thyme leaves
  • 1 c. apple cider

Instructions

  • Season pork chops all over with paprika, salt, and pepper.
  • In a large skillet, heat oil over medium heat. Add pork chops and cook, turning halfway through, until golden, about 3 minutes per side. Transfer to a plate.
  • To the same skillet, add apple, onion, and garlic and cook until apples and onion are browned and slightly softened, about 8 minutes. Add herbs, and apple cider and bring to a simmer. Return pork chops to skillet and simmer until cider is almost completely reduced and a thermometer inserted in the thickest part of the chops registers 145°, 6 to 8 more minutes.
