Pimento Cheese Deviled Eggs

Ingredients
  

  • 12 large eggs
  • 1/2 cup mayonnaise
  • 1 1/2 Tbsp. fresh lemon juice
  • 1 tsp. hot sauce
  • 1/2 tsp. kosher salt
  • 1/3 cup finely chopped roasted red pepper
  • 1 oz. extra-sharp Cheddar cheese, finely grated (about 1/4 cup)
  • 1 scallion, finely chopped, plus more for garnish

Instructions
 

  • Place eggs in a large saucepan, adding enough cold water to cover by 2 inches; bring to a boil. Remove from heat, cover, and let stand 11 minutes. 
  • Drain eggs and return to pan. Gently shake pan until eggs crack all over. Run under cold water, then peel eggs; discard shells. 
  • Halve eggs lengthwise and transfer yolks to a bowl. Add mayonnaise, lemon juice, hot sauce, and salt; mash with a fork to combine. Add roasted pepper, Cheddar, and scallion and stir to combine. Spoon or pipe into egg whites and garnish with additional scallions.
