
Pimento Cheese Deviled Eggs
The traditional "caviar of the South" is an ideal filling for deviled eggs.
Ingredients
- 12 large eggs
- 1/2 cup mayonnaise
- 1 1/2 Tbsp. fresh lemon juice
- 1 tsp. hot sauce
- 1/2 tsp. kosher salt
- 1/3 cup finely chopped roasted red pepper
- 1 oz. extra-sharp Cheddar cheese, finely grated (about 1/4 cup)
- 1 scallion, finely chopped, plus more for garnish
Instructions
- Place eggs in a large saucepan, adding enough cold water to cover by 2 inches; bring to a boil. Remove from heat, cover, and let stand 11 minutes.
- Drain eggs and return to pan. Gently shake pan until eggs crack all over. Run under cold water, then peel eggs; discard shells.
- Halve eggs lengthwise and transfer yolks to a bowl. Add mayonnaise, lemon juice, hot sauce, and salt; mash with a fork to combine. Add roasted pepper, Cheddar, and scallion and stir to combine. Spoon or pipe into egg whites and garnish with additional scallions.
