
Peri Peri Paneer Shashlik
Peri Peri Paneer Shashlik is a vibrant fusion appetizer that brings together the soft richness of Indian paneer with the fiery zest of Peri Peri spice, inspired by Portuguese-African flavors. Marinated paneer cubes are skewered with bell peppers, onions, and sometimes tomatoes, then grilled or roasted to smoky perfection. The dish offers a perfect balance of heat, tang, and creaminess, making it a popular choice for BBQ platters, starters at parties, or as a sizzler served on a hot plate with sautéed veggies and herbed rice.
Ingredients
For Peri Peri Sauce/Marinade
- Kashmiri Dried Red chillies – 15nos
- Water – 1lt
- Ginger (roughly cut) – 1½ tbsp
- Garlic cloves – 6-7nos
- Cumin – 1½ tsp
- Cloves 3-4nos
- Cinnamon (2” long) – 1 no
- Salt – ¾ tsp
- Lemon juice – ¼ cup
- Tomato ketchup – ⅓ cup
- Oil – ¼ cup
For veggies
- Paneer cubes – 400 gms
- Salt – 1tsp
- Onion chunks – 1cup
- Tomato chunks – 1cup
- Yellow capsicum chunks – ½ cup
- Green capsicum chunks – ½ cup
- Spring onion bulbs – few
- Wooden skewers (long) – few
- Oil – for shallow frying
Instructions
For Peri Peri Sauce/Marinade
- In a pan dry red chilli, pour water and give a quick boil. Lower the heat to simmer for 10-15mins or till they become tender. Remove to a bowl and cover it. Let it rest for 30mins. Now remove the chillies and add them to a mixer grinder along with a dash of the chilli water, ginger, garlic, cumin, cloves, cinnamon, salt, lemon juice, tomato ketchup and oil. Grind it to a fine paste and remove the peri peri paste. Now this sauce will be served as a marinade and also as a Diperi Periing sauce. Keep it aside.For Veggies Place the paneer cubes along with onion, tomato, capsicum and spin onions on to a platter. Sprinkle generous pinch of salt over them and lightly toss them. Add 2-3tbsp of the peri peri paste on to the paneer and veggies and mix them with hands to coat the marinade all over them. Now skewer the paneer & veggies alternatively on to a wooden skewer. Once all of the veggies are on the skewer keep it aside to rest for at least 15mins. In case you do not have skewers then you can grill them as is on a pan or in an oven. To cook on a tawa, heat the tawa and drizzle oil, place the marinated paneer peri peri shashlik and cook them till they brown. Turn and cook on all sides. Remove and serve hot. Use the remaining marinade as a dipping sauce.
For Veggies
