
Penne with Mashed Courgettes Parmesan & Basil Recipe
A tender al dente Italian penne pasta, coated in a spiced zucchini mash seasoned with chili, garlic, Parmesan, and fresh basil.
Ingredients
Pasta
- black pepper (to taste)
- 1 tsp chilli flakes
- 2 whole courgette
- 4 sprig fresh basil
- 2 cloves garlic
- 0.5 tbsp olive oil
- 25 grams parmesan or pecorino cheese
- 150 grams penne pasta
- salt (to taste)
Instructions
- half fill a medium pan with water and boil, add a spot of olive oil and a pinch of salt to the boiling water, add the pasta to the boiling water and cook until tender but with a slight bite
- half fill a medium pan with water and boil, wash trim the courgette, slice the courgettes, lightly boil the courgettes till soft
- drain the courgett, urgettes, add the oil, wash and tear the basil leaves, add to the pan
- peel and crush the garlic using the garlic crusher or chop finely,add to the pan, Add the chilli flakes to the pan,grate the parmesan, add 2/3 of the cheese to the pan, set a side
- drain the pasta, rinse the pasta in cold water, add the courgette mixture to the pasta
- return to the heat and gently warm through, season with salt and pepper, cook for 3 to 4 mins, place the pasta on a serving plate, sprinkle with cheese
